    Delicious Curried Butternut Squash and Caramelized Onions

    Do you like butternut squash? I love it! Last year I actually started eating this yummy fall fruit instead of just using it for fall decorating, and I am so glad I did! One day I got a whim to try it roasted in the oven with just some olive oil, garlic, onions and salt and pepper. It was sooo good, and that day the whole family became fans of butternut squash. We ended up having it for our Thanksgiving and Christmas meals too!

    Recently I made curried butternut squash with caramelized onions just using ingredients I threw together, and it was so good I decided to share it here on the blog! This “recipe” is really great for all the onion lovers out there! The sweetness of the squash and caramelized onions along with the warmth and spiciness from the curry is just delightful to the taste buds and so perfect for fall.

    I think a lot of people are intimidated by cooking and eating fall fruits and gourds, but they really are so tasty, nutritious, and perfect for holiday menus. The first time I made butternut squash I peeled it raw and it wasn’t very fun… but once I discovered the “microwave trick” I make squash quite often now!

    Here is my super easy way to prepare squash: Poke several holes all through the squash (I make slits with a knife) and put it in microwave for eight minutes.

    After the eight minutes, slice the butternut squash in thirds, cutting off the end and two thick slices toward the top. Then cut the end (with the seeds) lengthwise. *Careful—the squash will be very hot.

    Microwave for another three minutes. This will soften the squash enough to allow it to be peeled and cut easily into cubes, but it will still need to be cooked on the stove top or oven. Some people scoop out the seeds, but to save time I simply just cut off the good fruit next to the seeds and discard the seeded ends.  *I have also roasted the butternut squash seeds just like pumpkin seeds and they are so good too!

     

    As you can see, the squash is still firm and able to be cubed, but the skin will peel off easily. I use a knife and peel it like an apple. *The squash will be extremely hot after taking it out of the microwave so you will have to let it cool before peeling.

    While the squash is cooling, slice a big onion. You can dice the onion if you prefer, but I really love big slices of onions for this recipe.

    Here I used a yellow onion which is what I had on hand, but the best for this recipe is a huge sweet vidalia onion!

    I always use my Calphalon 12 inch pan for sauteeing and caramelizing! I started investing in Calphalon years ago and it made a huge difference in my enjoyment of cooking, and meals actually tasted better. It is also extremely easy to clean!

    Pour a generous amount of organic olive oil in a pan and heat it on low while  slicing the onions. Then add the onions to the pan and stir them around to coat them in the oil. Add 1 tsp of curry and sea salt and let the onions cook on low while preparing the squash.

    Cut the squash into 1 inch chunks/cubes and add 1 heaping Tbs of curry and several liberal “shakes” of pink Himalayan sea salt. Stir gently to coat the squash in the spice mixture.

    I have used plain curry on my squash and it is delicious, but I also use this Sri Lankan Curry which actually has some turmeric in it as well, so if you don’t have a traditional Indian spice mix, you can add 2 tsp of turmeric for extra flavor.

    Add the butternut squash to the onions which should be starting to caramelize at this point (about 10 minutes). Drizzle a bit more olive oil on top and stir the onions and squash together.

    Sprinkle a bit more sea salt and freshly ground pepper (to taste preference) and cook for 5-10 minutes or until squash is browning with a nice curried crust around the edges. As you can see here, some of my onions are a little more than caramelized, but I overcook a few  just because I like them that way!

    Place this delicious squash in your favorite bowl, let it cool and enjoy!

    One medium butternut squash will serve two, but if I am alone at lunch I usually eat it all by my lonesome! I love eating curried butternut squash and caramelized onions as a meal, but it is also a wonderful side dish for roasted chicken. Overall it only takes about 25 minutes to make. Very easy. Very tasty. Very quick. Very healthy. Curried butternut squash and caramelized onions…it’s what for lunch (or dinner, or even breakfast)!

    Enchanting Halloween Decor: A Bewitching Makeover

    Gorgeous Halloween Porch Ideas

    Do you love DIY Halloween decor ideas? Then you have come to the right place! Halloween decor at the yellow brick home is always over the top! Halloween is so much fun and I love having unique decorations to delight guests for the holiday.  I like to make my own decor or “upcycle” and repurpose old ones for originality. One of my favorite Halloween DIY projects is this “bewitching makeover” I gave a yard sale witch.

    A few years ago I purchased this witch at my mother-in-law’s yard sale for $10.00. I have always wanted one of the life size animated witches like the ones in Grandin Road, but I could never bring myself to pay full price for one. I was thrilled to get a hold of this old gal because I knew with a little creativity she could be awesome. She looked like she had seen one too many Halloweens, so I decided to give her a shabby vintage makeover!

    The first thing I did was add some false eyelashes. I used a cheap black eyeliner pencil to reshape her eyes, and give her some brows and lipstick. I even gave her a new ugly witch mole beauty mark.

    The next step was taking her hair out of a ratty old pony tail and letting it down. Now she is rockin’ the awesome silver hair like we are seeing all over Pinterest these days! Then I started adding style and bling with a spider scarf and vintage brooch. I also reshaped her hat and glued a black and orange glittery rose on the side.

    Bewitching! Her eyes light up and she cackles along to the sound of thunder and screeching cats meowing in the background! So funny! And now she’s just too stylish to be creepy. The neighborhood kids love her and I am hoping now that my niece won’t be afraid of her like she was when my in-laws had the witch on their porch!

    If this isn’t a case for proving the power of makeup and bling, I don’t know what is! I found the vintage rhinestone brooch for .25 at a yard sale earlier in the summer and the scarf, glasses, eyelashes and eyeliner came from the Dollar Tree. The rose was a clearance sale special at Jo-Ann Fabric, so I spent about $6 on her makeover. $16 total-Works for me!

    I love  having her seated at the top of our porch stairs holding this large Haunted House ticket sign to greet Trick-Or-Treaters. She is the neighborhood Halloween “Hostess with the Mostess!”

    Because of the  sound effect of a cat meow and screech I got the idea to put my vintage blow mold cat at her feet. Now it sounds like it’s coming from the cat!

    My witch has quite a green thumb, literally! Just look at these gorgeous, vibrant orange mums with deep black petunias! She must have used some magic to create this stunning arrangement!

    I love how this witch turned out and I think she looks even better than some of the more expensive animated witches I have seen in big brand catalogs and stores. I really don’t celebrate the “dark side” of Halloween and I like that by adding a touch of beauty she loses the “evil” and foreboding look and becomes more whimsical. Even if you aren’t a makeup artist, you can certainly do a makeover like this one on any second hand witch you may come across on your junkin’ adventures. Or you can always “bling up” a newer witch to give her a little more character and pizazz!

    Harvest Home Tour Early Fall 2017

    Welcome everyone to my “Harvest Home” early fall home tour! I am so thrilled you are visiting today!     On this tour you will see how I decorate for early fall as I am still transitioning into the season, taking cues from nature. It has been 80 degrees lately and the leaves are only barely starting to change here in Eastern, KY, so it’s still a couple of weeks before I go all out on my fall colors and pumpkin extravaganza. I have decorated our front porch very simply to start off the season with a big basket of white mums sitting on a vintage chair by the front door. Last week I went a friend’s yard sale and she gifted me this big white pumpkin right out of her garden. I am really loving how the white mums and pumpkin look with the yellow bricks too!

    DIY Shabby Vintage Burlap Pumpkins

    How to give inexpensive Dollar Tree Burlap Pumkins A Shabby Vintage Makeover With Chalk Paint and Vintage Embellishments Chalk Painted Pumpkins DIY

     

    It’s almost the middle of September, and I am going fall crazy over here! Today I spent the day chalk painting pumpkins and in between drying times I have been decorating for the Harvest Home Blog Hop which begins next Tuesday! This coming Saturday I am going junkin’ at the Country Living Fair, which means I won’t be able to do any crafting or decorating that day, so I am really rushing to get things ready now! I wanted to use the burlap pumpkins in some vignettes for the tour, so I hustled and finished some today and I am so glad I did. Now I am excited to show you how you can make some DIY shabby vintage burlap pumpkins too. They turned out so pretty and even though I have tons of other things to do, I am heading back to Dollar Tree tomorrow to buy a few more. Just take a look at these beauties!
